- 20 prawns, split
- 2 oz. julienne zucchini
- 2 oz. sliced mushrooms
- 2 oz. julienne carrots
- 2 oz. broccoli florets
- 2 oz. small green beans
- 4 oz. tomatoes, chopped, peeled and seeded
- other seasonal fresh vegetables as desired
- pasta for 4 people
- 4 oz. olive oil
- 2 oz. butter
- 1 Tbsp. fresh basil
- 1 Tbsp. diced onion
- 1 tsp. diced garlic
- pinch of white pepper/salt
- 1 tsp. chopped parsley
- 8 oz. Parmesan
Directions

1Blanch the vegetables until just firm.

2Saute the onions, garlic, basil and parsley in the oil.

3Add the vegetables and prawns, tossing lightly until well heated.

4Add the rest of the ingredients, holding back half of the cheese.

5Add the heated pasta and mix completely.

6Serve on heated plates and sprinkle the remaining cheese over the top.
