- 3 lb. /1.5 kg red potatoes (about 10 medium), cut into chunks King Sooper's 5 lb For $1.88 thru 02/09
- 1 cup sour cream
- 125 g (1/2 of 250-g pkg.) Philadelphia Brick Cream Cheese, cubed
- 1/4 cup milk
- 2 Tbsp. butter
- 1 pkg. (8 oz./227 g) fresh mushrooms, sliced
- 2 Tbsp. chopped fresh thyme
Directions

1Place potatoes in large saucepan.

2Add enough water to completely cover potatoes.

3Bring to boil on high heat.

4Reduce heat to medium-low; cook 15 min.

6Drain potatoes; return to saucepan.

7Add sour cream, cream cheese and milk.

8Mash with potato masher to desired consistency.

9Spoon into microwaveable serving bowl; cover with plastic wrap.

11Meanwhile, melt butter in large skillet on medium-high heat; add mushrooms.

17Microwave on HIGH 6 to 8 min.
