- 12 cup salt
- 14 cup water
- 6 ripe lemons
Directions

1Quarter lemons lengthwise and place in a sterilized 1 quart mason jar.

2Dissolve salt into water.

3Pour into jar, over lemons.

4Let sit for 7 days at room temperature, until lemons become soft and brownish.

5Shake jar occasionally.

6To store, add olive oil and refrigerate.

7Lemons should last for months.
