    Place meat on rack in oven pan-fat side up.

    Rub meat with seasonings.

    Turn oven up to 425°. Cook for 15 minutes, to sear meat.

    Turn oven down to 325° and cook 20 minutes for each pound of meat.

    Ends well to rare in middle of meat, can cook longer if desire well done throughout.
