3Turn oven up to 425°. Cook for 15 minutes, to sear meat.

4Turn oven down to 325° and cook 20 minutes for each pound of meat.

6cover with foil while cooking.

7Slice to thickness desired.

8Ends well to rare in middle of meat, can cook longer if desire well done throughout.
