Apple risotto with bacon

Ingredients
- 1 dash olive oil
- 400 ml arborio rice
- 1 onion, finely diced
- 400 ml apple juice
- 1 1/2 liter vegetable stock
- 1 apple, diced
- 8 slice bacon
Directions

1Add oil to pan and set to medium heat.

2Finely dice the onion and saute with rice and apple juice until mixture has thickened.

3Reduce heat to medium low and add stock, one ladle at a time, continually stirring.

4Wait until the mixture has thickened before adding another ladle

5When the rice is al dente remove from heat and add the diced apple

6Fry the bacon and serve together with risotto
