1Place in roasting pan on rack in a 375° oven.

2Cook, uncovered, with fat side up 1 hour and 15 minutes. Turn oven off and do not open for 5 hours.

3Forty-five minutes before serving, add freshly ground pepper (optional).

4Return to 300° oven until serving time.

5Roast may be rubbed with a mixture of gourmet pepper, salt, onion powder, garlic powder and paprika before cooking, if you prefer seasoning.
