Ingredients
- 250 ml water
- 80 grams butter
- 150 grams plain flour
- 3 eggs
- 435 ml milk
- 1 vanilla bean
- 3 egg yolks
- 70 grams granulated sugar
- 50 grams plain flour
- 250 grams dark chocolate
- 100 grams butter
- 100 ml sweet cream
Directions

1Bring the water to the boil.

2Add butter.

3Add flour.

4Stir it overt medium heat for 2min.

5Cool it down for 5min.

6Gradually add lightly whished egg.

7One at a time.

8Mix until dough is thick and glossy.

9Squeeze the dough in full circles.

10Bake them for 35min on 200C or until golden and puffed.

11For the filling, warm milk, add vanilla, egg yolks, sugar and flour.

12Mix for 5min or until mixture thickens.

13Cover the pan with plastic wrap and cool down the filling.

14Fill the profiteroles with filling from the bottom-up.

15Cover them with chocolate topping.
