  • 1/3 c. dry sherry or white wine
  • 1/4 c. sugar
  • 1/3 c. soy sauce
  • 1 tsp. ginger
  • 2 lb. chicken, skinned and boned
  • green leeks or green onions, cut into 1-inch pieces

    Make Yakitori by alternating chicken with leeks on 8-inch bamboo skewers.

    Makes 24 skewers.

    Cook under a broiler for 8 minutes, brushing frequently with sauce. Serve on a bed of rice with sauce.
