Ingredients
- 2 lbs Spanish onions, sliced
- 2 tablespoons olive oil
- 12 lb prosciutto, sliced thick and diced
- 1 12 cups fresh sage leaves, coarsely chopped
- 1 lb penne pasta, cooked and drained according to package directions
- 3 tablespoons pecorino romano cheese, grated
- salt
- ground black pepper
Directions

1Heat oil in saucepan.

2Add onions and cook until onions start to caramelize.

3Reduce heat to medium low and add prosciutto and sage.

4Cook the mixture for 20-25 minutes.

5Season the onions mixture to taste with freshly ground black pepper and salt.

6Toss all ingredients together with the paste, add cheese and serve with salad, garlic bread and wine.
