- 4 ounces powdered soy protein concentrate
- 2 14 ounces oat bran
- 2 34 ounces whole wheat flour
- 34 ounce wheat germ
- 12 teaspoon kosher salt
- 3 ounces raisins
- 2 12 ounces dried cherries
- 3 ounces dried blueberries
- 2 12 ounces dried apricots
- 12 13 ounces silken tofu
- 12 cup unfiltered apple juice
- 4 ounces dark brown sugar
- 2 large eggs, beaten
- 23 cup natural-style peanut butter
Directions

1Put some parchment paper (lightly coated with canola oil) in a 13 by 9 Pyrex dish and put aside.

2Heat the oven to 350 degrees.

3In a big bowl, combine the soy protein powder, oat bran, wheat flour, wheat germ, and salt (essentially all the dry ingredients) and put aside.

4Chop the dried fruit and set aside.

5In another bowl, stir the tofu until very smooth, and add the apple juice, brown sugar, eggs, and peanut butter.

6Now add all this to the dry ingredients (soy protein powder mixture).

7Now fold in the fruit.

8Spread this out in the Pyrex dish.

9I usually have a lot more luck by covering the top of the batter with parchment as well and spreading it out like that.

10Bake for 35 minutes in a 350 degree oven, or until the internal temperature of the mixture reaches 205 degrees.

11Take them out of the oven and let cool completely.

12This will take about half an hour.

13Cut into twelve bars.

14This will keep several months in the freezer, but about a week outside of it.
