- 1/4 cups Cocoa Powder
- 1/4 cups Carob Powder
- 1 teaspoon Vanilla Extract
- 3/4 teaspoons Peppermint Extract
- 1/2 teaspoons Stevia, Liquid
- 4 Tablespoons Coconut Oil, Liquid
Directions

1Place all ingredients into a bowl and stir together.

2Scoop onto a plate or tray, shape each scoop like a cookie, then set in the fridge to set.

3You want the cookies to be hard to the touch.

4Keep the thin mints in the refrigerator or store in the freezer.
