Ingredients
- 2 c. sugar
- 1 c. oil
- 3 eggs
- 1 jar junior prunes with tapioca (or 2 small jars)
- 2 1/2 c. plus 1 Tbsp. flour
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 2 tsp. baking soda, mixed in 1 c. buttermilk
- 1 tsp. vanilla
- 1 c. chopped walnuts
Directions

1Put all ingredients in a bowl, except the walnuts, and mix well.

2Add nuts.

3Bake in a small greased loaf pans at 350° for 1/2 hour, then reduce heat to 325° and bake for 1/2 hour.

4Let cool for 25 minutes or so, then remove from pans and cool on racks.

5Keeps well in refrigerator or freezes well.

6(I use three 3 1/2 x 7 x 2-inch deep pans.)
