Prune Bread

Ingredients

  • 2 c. sugar
  • 1 c. oil
  • 3 eggs
  • 1 jar junior prunes with tapioca (or 2 small jars)
  • 2 1/2 c. plus 1 Tbsp. flour
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 tsp. baking soda, mixed in 1 c. buttermilk
  • 1 tsp. vanilla
  • 1 c. chopped walnuts

    Put all ingredients in a bowl, except the walnuts, and mix well.

    Add nuts.

    Bake in a small greased loaf pans at 350° for 1/2 hour, then reduce heat to 325° and bake for 1/2 hour.

    Let cool for 25 minutes or so, then remove from pans and cool on racks.

    Keeps well in refrigerator or freezes well.

    (I use three 3 1/2 x 7 x 2-inch deep pans.)
