Pulled Seitan Bbq Sandwich

Ingredients
- 2 tablespoons olive oil
- 1 small onion, chopped
- 1/4 cup garlic clove, minced
- 15 ounces tomato sauce
- 1 tablespoon horseradish
- 2 teaspoons molasses
- 2 teaspoons cider vinegar
- 1 teaspoon lemon zest
- 1/2 cup water
- 16 ounces seitan, shredded
- 6 sandwich buns
- hot sauce, to taste
Directions

1Heat oil over med heat and add onion then saute 7 minutes. Add the garlic and cook one minute more.

2Stir in the sauce and cook 3 minutes then add horseradish, molasses, vinegar, lemon zest and 1/2 cup water. Simmer over low heat for 30 minutes. Stir occasionally.

3Fold in Seitan. Then fill buns with BBQ and top with coleslaw if you like.

4Serve with hot sauce on the side.
