Ingredients

  • 1 (3 1/2 oz.) can flaked coconut
  • 1 c. graham cracker crumbs
  • 1 c. chopped walnuts
  • 1/4 c. butter or margarine, melted
  • 2 c. pumpkin pie filling
  • 1 (14 oz.) can sweetened condensed milk
  • 2 eggs
  • 2 Tbsp. pumpkin pie spice
  • 1/2 tsp. salt

Directions

    Combine coconut, graham cracker crumbs, walnuts and melted butter in a large mixing bowl; mix well.

    Press 2/3 of mixture into an ungreased 13 x 9 x 2-inch baking pan.

    Combine pumpkin, milk, eggs, spice and salt.

    Spoon over coconut mixture.

    Sprinkle remaining coconut mixture over top.

    Bake at 375° for 30 to 35 minutes.

    Cool in pan.

    Chill thoroughly.

    Cut into bars.
