- 1 1/2 Tbsp. butter
- 1 small onion
- 1 c. pumpkin puree or canned pumpkin
- 1 3/4 c. chicken broth
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 c. heavy cream
- salt and pepper
- 2 scallions, thinly sliced for garnish
Directions

1Saute onion in butter.

2Add pumpkin, chicken broth, 2 cups water, cinnamon and nutmeg.

3Bring to a boil; then simmer for 5 minutes.

4Reduce heat to low; add cream.

5Gently heat until cream is warm.

6Season with salt and pepper.

7Sprinkle with scallions before serving.
