Ingredients
- 3 c. all-purpose flour
- 3 c. sugar
- 2 tsp. soda
- 1 tsp. each: nutmeg and salt
- 2 Tbsp. cinnamon
- 1 c. each: nuts, raisins, coconut and diced dates
- 4 eggs
- 1 tsp. vanilla
- 1 c. cooking oil
- 3/4 c. milk
- 2 c. cooked potato pumpkin, well drained
Directions

1Use 1/2 cup flour to dredge nuts, raisins, coconut and dates. Sift all other dry ingredients together.

2Cream sugar and oil. Add eggs, one at a time, beat well.

3Add pumpkin, beat, then add flour mixture alternately with milk.

4Add vanilla.

5Stop mixer and pour in nut mixture and fold in well.

6Bake in loaf pans in 325° to 350° oven for 45 minutes or until done.

7Don't overcook.
