- 2 c. flour
- 1 c. brown sugar
- 1 Tbsp. baking powder
- 1 tsp. ground cinnamon
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1/4 tsp. ground nutmeg
- 1/8 tsp. ground ginger
- 1 c. canned pumpkin
- 1/2 c. milk
- 2 eggs
- 1/3 c. shortening
- 1/2 c. chopped walnuts
- 1/2 c. raisins (optional)
Directions

1Combine 1 cup of the flour and first 7 ingredients.

2Add rest, except nuts and raisins.

3Beat with electric mixer on low and then on high for 2 minutes.

4Then add remaining flour.

5Beat well. Stir in nuts.

6Pour in greased 9 x 5 x 3-inch loaf pan.

7Bake at 350° for 60 to 65 minutes.

8Test with toothpick.
