- 3 1/3 cups all-purpose flour
- 3 cups sugar
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1 tablespoon ground cinnamon
- 1 tablespoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1 (18-ounce) can pumpkin pie mix
- 1 cup vegetable oil
- 2/3 cup water
- 4 eggs, slightly beaten
Directions

1Combine dry ingredients; stir well. Add pie mix, oil, water, and eggs; beat 2 minutes at medium speed of electric mixer.

2Spoon batter into 2 greased and floured 9- x 5- x 3-inch loaf pans. Bake at 350° for 1 hour and 40 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans and cool completely.
