  • 26 oz. canned pumpkin
  • 1 1/2 c. brown rice syrup or honey or fructose
  • 1/2 c. canola oil and/or safflower oil
  • 1/2 c. applesauce, unsweetened
  • 4 eggs
  • 3.5 c. whole wheat flour
  • 1/2 c. wheat germ or oat bran
  • 2 tsp. baking soda
  • 1 tsp. light salt
  • 2 tsp. cinnamon
  • 1 tsp. ground ginger
  • 1 tsp. ground nutmeg
  • 1 Tbsp. dried parsley

    Pour into 13 x 9-inch pan prepared with Pam. Bake at 350° for 60 to 75 minutes until knife comes out clean.
