  • 1 c. cooking oil
  • 2 c. all-purpose flour
  • 2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 2/3 c. sugar
  • 1 (16 oz.) can pumpkin
  • 2 tsp. baking powder
  • 1 tsp. salt

Directions

    Beat eggs, sugar, oil and pumpkin until light and fluffy. Then in another bowl, combine all dry ingredients. Add pumpkin mixture; mix thoroughly. Put into ungreased 15 x 9 x 1-inch pan (or spray with Pam, if desired). Bake 30 minutes at 350°. Cool and frost.
