Pumpkin Cake

- 14 medium sized pumpkin
- 6 eggs
- 1 cup sugar
- 2 cups self raising flour
- 3 tablespoons butter
Directions

1Peel and chop the pumpkin and cook till tender.

2Drain and set aside to cool.

3Preheat oven to 180 degrees celsius and prepare a loaf pan by greasing with butter and then sprinnkling with flour.

4Tip out any excess flour.

5While pumpkin is cooling, place all other ingredients (flour, sugar eggs, butter) into a bowl.

6Beat until well combined with an electric mixer.

7Mash the pumpkin and add to the mixture.

8Continue to beat with mixer until well combined.

9Pour into the loaf pan and cook for approximately 20 to 30 minutes.

10Check with skewer to see if the cake is done.

11When the skewer is dry when removed, the cake is ready.

12Leave to cool for approximately 5 minutes and then turn out onto a serving plate.
