  • 2 c. sugar
  • 1 (16 oz.) can pumpkin
  • 1 c. vegetable oil
  • 4 eggs, beaten
  • 2 c. flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1/2 c. coconut
  • 1/2 c. pecans

    Combine sugar, pumpkin, oil and eggs. Beat 1 minute. Combine dry ingredients except for coconut and nuts. Add to sugar mix in 3rds, mixing well. Stir in coconut and nuts. Bake in 350° oven in 3 floured 8-inch pans (square or round) or in large tube or Bundt pan. Eight-inch takes 25 to 30 minutes. Takes a little longer for tube or Bundt. Frost with Cream Cheese Frosting. Cool 10 minutes in pan and then cool completely before icing.
