- 3 eggs
- 1 c. sugar
- 3/4 c. canned pumpkin
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. chopped nuts
Directions

1Beat eggs for 5 minutes and gradually add sugar and pumpkin. Combine flour, baking powder, spices and salt.

2Fold into pumpkin mixture.

3Spread into a greased and floured 10 x 15-inch pan.

4Top with the chopped nuts.

5Bake at 350° for 15 minutes. Turn out on a terrycloth towel.

6Sprinkle with powdered sugar.

7Roll cake and towel up together.

8Cool, then unroll and spread filling on. Reroll and chill.
