Pumpkin Cake Roll

- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 3/4 c. flour
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1 c. finely chopped walnuts
Directions

1Beat the eggs at high speed for 5 minutes.

2Gradually beat in sugar.

3Blend in pumpkin and lemon juice.

4Stir together dry ingredients.

5Fold into pumpkin-egg mixture.

6Grease a 10 x 15-inch jelly roll pan; line with waxed paper and grease paper. Pour batter into pan and spread to corners.

7Scatter nuts on top. Bake at 375° for 15 minutes.

8Run knife around edge of pan and invert on a towel that has been sprinkle with confectioners sugar. Peel off paper and roll while hot, towel and cake together.

9Cool. and remove towel.
