Pumpkin Cake Roll

- 3 eggs
- 1 c. sugar
- 2/3 c. canned pumpkin
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 3/4 c. plain flour
- 3/4 c. chopped nuts
Directions

1Mix eggs, sugar, pumpkin, soda, cinnamon and flour.

2Grease a cookie sheet and line with wax paper (greased).

3Pour batter in pan and sprinkle with nuts.

4Bake at 375° for 15 minutes or until a toothpick comes out clean.

5Sprinkle powdered sugar on linen cloth (not terry).

6Dump cake onto towel right from oven.

7Remove paper and roll cake along with the towel, jelly roll style.

8Let cool 2 hours in refrigerator.
