- 2 c. plain flour
- 1 c. butterscotch morsels
- 1 tsp. baking soda
- 3/4 c. butter Crisco
- 2/3 c. sugar
- 2/3 c. brown sugar
- 1 egg
- 1/2 c. cooked or canned pumpkin
- 1 c. quick cooking oats (not instant)
- 1 c. white chocolate chunks
- 2/3 c. chopped walnuts
Directions

1Preheat oven to 350°.

2Line cookie sheets with aluminum foil. In a bowl of a food processor fitted with a steel blade, combine flour and butterscotch chips.

3Process until butterscotch chips are as fine as the flour.

4Pour into a large bowl; add baking soda, Crisco, sugar, brown sugar, egg and pumpkin.

5Beat until well mixed.

6Stir in oats, white chocolate and walnuts.

7Drop by teaspoons 2 inches apart onto the foil-lined cookie sheets.

8Bake 12 to 14 minutes or until golden brown.

9Remove immediately and cool on racks.

10Store in airtight container.
