Pumpkin Cinnamon Rolls

  • 2 3/4 to 3 1/4 c. flour
  • 1 pkg. yeast
  • 1/2 c. pumpkin
  • 2/3 c. milk
  • 2 Tbsp. sugar
  • 4 Tbsp. butter, divided
  • 1/2 tsp. salt
  • 1 egg, beaten
  • 1/2 c. packed brown sugar
  • 1 tsp. cinnamon

    Combine 1 1/2 cups flour and yeast; set aside.

    In a small pan, heat and stir pumpkin, milk, sugar, 2 tablespoons butter and salt until warm (120° to 130°).

    Add to flour-yeast, along with egg.

    Beat on low for 30 seconds.

    Beat on high for 3 minutes. Stir in enough flour to make moderately stiff dough.

    Knead about 6 to 8 minutes.

    Place in a greased bowl, turning once to grease top.

    Cover; let rise until doubled, about 1 hour.

    Roll into a 12 x 10-inch rectangle.
