  • 2 cup sugar
  • 2 cup AP flour
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 2 cup pumpkin
  • 1 cup vegetable oil
  • 4 eggs

    Preheat oven to 350 degrees

    Mix all dry ingredients in a bowl and set a side.

    Mix all wet ingredients in separate bowl with mixer until all incorporated.

    Slowly mix in dry ingredients until a smooth batter

    Fill muffin cups 3/4 full.

    Bake for 20 to 25 minutes or toothpick test clean.

    Let cool completely and add cream cheese frosting.
