  • 1 cup pumpkin puree
  • 1 teaspoon ground ginger

  • 1 3/4 cups all purpose flour
  • 3/4 teaspoon salt

    -Preheat oven to 350F.

    -Prepare a 9x13 inch loaf pan by spraying it with cooking spray.

    -In the bowl of an electric mixer, fitted with the whisk attachment, combine all the ingredients and mix on medium speed until well combined.

    -Pour the batter into the loaf pan.

    -Bake for about 1 hour or until a toothpick, inserted into the center of the loaf comes out clean.
