  • 3 whole Eggs
  • 1 cup Granulated Sugar
  • 3/4 cups Flour
  • 1/2 teaspoons Cinnamon
  • 1 teaspoon Baking Soda
  • 1-1/4 teaspoon Vanilla, Divided
  • 2/3 cups Canned Pumpkin
  • 8 ounces, weight Cream Cheese
  • 1 Tablespoon Butter
  • 1 cup Powdered Sugar

Directions

    Grease a jellyroll pan. Place waxed paper on the bottom of the pan and grease again.

    Mix eggs, granulated sugar, flour, cinnamon, baking soda, 1 teaspoon vanilla, and pumpkin. Pour into the pan. Bake for 15 minutes at 350 degrees F.

    Turn immediately into a flat towel that has been well dusted with powdered sugar. Roll like a jelly roll. Let cool completely. With remaining ingredients, make the filling. Roll out the jelly roll, spread filling on it, then re-roll.
