- 2/3 c. cooked or canned pumpkin
- 3 eggs
- 1 c. sugar
- 3/4 c. flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. nutmeg
- 1 c. chopped pecans
- 1 tsp. lemon juice
- powdered sugar
Directions

1Beat eggs for 5 minutes.

2Gradually beat in 1 cup sugar.

3Stir in pumpkin and lemon juice.

4Combine all dry ingredients (except powdered sugar) and fold into pumpkin mixture.

5Pour onto a greased, floured cookie sheet.

6Sprinkle with nuts.

7Bake for 15 minutes at 350° or until cake is springy.
