Pumpkin Pie

Ingredients

  • 1 envelope gelatin
  • 1/4 c. cold water, dissolve gelatin in this
  • 1 can (No. 2) pumpkin or 1 1/2 c.
  • 3 egg yolks
  • 1 c. sugar or 1 1/4 c. brown sugar
  • 1/3 c. milk
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. mace
  • 3 egg whites, whipped

Directions

    Beat egg yolks and 1/2 of sugar.

    Add pumpkin, milk, salt, mace and cinnamon.

    Cook over hot water until thick, stirring constantly about 10 minutes, remove from heat.

    Add gelatin.

    Let this cool. Beat egg whites until stiff.

    Add remaining sugar.

    Fold into pumpkin mixture and put in baked pie shell.

    Top with cream.
