- 2 cups sliced shallots
- 1 tablespoon canola oil
- 1 cup wine Sauterne
- 4 cups dark chicken stock
- 2 bay leaves
- 1 thyme sprig
- salt to taste
- freshly ground black pepper to taste
Directions

1Caramelize shallots with oil until golden brown.

2Deglaze with wine and reduce the liquid by 80 per cent.

3Add stock, bay leaves, thyme and simmer.

4Reduce the liquid by 20 per cent.

5Check for seasoning.

6Remove the bay leaves and thyme.
