  • 1 (9-inch) pastry shell (unbaked with high fluted edge), chilled well
  • 2 eggs
  • 1 1/2 c. canned pumpkin
  • 1/4 c. brown sugar, firmly packed
  • 1/2 c. granulated sugar
  • 1/2 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1 1/2 c. evaporated milk

Directions

    Mix eggs, slightly beaten, with pumpkin. Combine dry ingredients and blend into pumpkin mixture. Stir in evaporated milk. Pour into chilled pastry shell; bake in hot 425° oven 15 minutes. Reduce heat to moderate 350°; bake 25 to 35 minutes more or until knife inserted 2-inches from edge comes out clean.
