  • 1 (16 oz.) can pumpkin
  • 4 eggs, beaten
  • 1 (13 oz.) can evaporated milk
  • 1/2 c. Karo syrup
  • 1 stick margarine, melted
  • 1 1/4 c. sugar
  • 3 tsp. cinnamon
  • 1 tsp. ginger
  • 3/4 c. apricot preserves
  • 2 unbaked pie shells

Directions

    Spread 1/2 of the apricot preserves onto each unbaked pie shell.

    Mix remaining ingredients and pour into pie shells.

    Bake at 350° for 1 hour or until knife will slide in and come out clean. Cool on racks, then refrigerate.
