  • 2 c. cooked pumpkin
  • 1 1/2 c. undiluted evaporated milk
  • 1/4 c. brown sugar
  • 1/2 c. white sugar
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. nutmeg or allspice
  • 1/8 tsp. cloves
  • 2 slightly beaten eggs

    Cook pumpkin.

    Wash and cut in half crosswise.

    Remove seeds and strings.

    Place it in a pan, shell side up, and bake at 325° for 1 hour or more, depending on size, until it is tender and begins to fall apart.

    Scrape the pulp from the shell and put it through a ricer, strainer or blender.
