  • 2 c. pumpkin
  • 3 eggs, separated
  • 1 c. brown sugar
  • 1/4 tsp. salt
  • 1/4 tsp. grated nutmeg
  • 1/2 tsp. ginger
  • 1/2 tsp. allspice
  • 1/4 tsp. cinnamon
  • 3 c. scalded milk
  • 1 unbaked pie shell

Directions

    Combine pumpkin, egg yolks, brown sugar, salt and spices; add milk.

    Beat 3 egg whites until stiff; fold into pumpkin mixture. Pour into unbaked pie shell.

    Bake at 450° for 10 minutes.

    Reduce temperature to 325°; bake for 30 minutes longer or until pie tests done.
