  • 3 lamb fillets Safeway 1 lb For $5.99 thru 02/09
  • 1 tablespoon olive oil
  • 2 cloves garlic, crushed
  • salt and pepper
  • juice 1 lemon
  • 1 tomato, diced Safeway 1 lb For $1.29 thru 02/09
  • 1/2 cucumber, diced
  • 1/2 red onion, diced
  • 1 tablespoon olive oil, extra
  • salt and pepper, to taste
  • 125g CAPTAIN'S TABLE* Water Crackers

Directions

    Marinate lamb fillets in the olive oil, garlic, salt, pepper and half the lemon juice for at least 1 hour.

    Mix the tomato, cucumber, onion, extra olive oil and remaining lemon juice.

    Season to taste.

    Cook the lamb in a hot pan for 5 minutes each side, wrap in foil and rest for 10 minutes.

    Slice thinly and serve, on crackers, topped with the tomato salad.
