  • 1 1/2 c. cooked (canned) pumpkin
  • 3/4 c. sugar
  • 1/2 tsp. salt
  • 1 tsp. ginger
  • 1 to 1 1/4 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 to 1/2 tsp. cloves
  • 1/4 tsp. allspice
  • 3 slightly beaten eggs
  • 1 (6 oz.) can (3/4 c.) evaporated milk
  • 1/2 tsp. vanilla
  • 1 c. milk

    Combine pumpkin, sugar, salt and spices; blend.

    Add eggs and milk.

    Mix thoroughly.

    Pour into 9-inch pastry-lined pie pan. Bake at 450° for 10 minutes, then at 325° for 50 minutes.
