  • 2 c. fresh pumpkin, cooked
  • 1 c. milk
  • pinch of salt
  • 1 tsp. vanilla
  • 1 c. sugar
  • 3 Tbsp. flour
  • 2 eggs
  • 1 (9-inch) pie crust

Directions

    Put all ingredients, except crust, in a blender.

    Mix 1 to 2 minutes until all ingredients are blended.

    Pour into 9-inch pie crust and sprinkle top with cinnamon.

    Bake at 425° for 15 minutes. Reduce oven temperature to 350° and bake 45 minutes longer until knife inserted in center comes out clean.

    Cool.
