  • 3/4 cup spelt or whole wheat pastry flour
  • 1 cup chopped toasted pecans
  • 1/2 cup of rapadura or brown sugar
  • 2 teaspoons ground cinnamon (one teaspoon for crust, one for batter)
  • 1/2 cup melted butter
  • 1 (15 ounce) can pumpkin
  • 1 cup heavy cream (1 cup pureed ricotta works just as well)
  • 1/4 cup maple syrup
  • 2 eggs
  • 1 tsp. vanilla
  • 1/2 tsp. ground ginger
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon salt
