Pumpkin Pie(Mama'S)

Ingredients

  • 4 or 5 c. pumpkin
  • 4 Tbsp. flour
  • 1 can Eagle Brand milk
  • dash of salt
  • 1/2 c. brown sugar
  • 2 Tbsp. vanilla
  • butter (about size of small egg)
  • 5 egg or 6 if small
  • 1/2 c. sugar
  • 1 tsp. ginger
  • 1 tsp. allspice
  • 1 tsp. nutmeg
  • 1 tsp. cloves
  • 1 tsp. cinnamon
  • 1 tsp. pumpkin pie spice

Directions

    Heat pumpkin and take off heat.

    Blend in flour, Eagle Brand milk, salt, brown sugar, vanilla and butter.

    Set aside.

    Beat together 1/2 cup sugar and spices.

    Add eggs to sugar-spice mixture.

    Mix together sugar-spice mixture and pumpkin mixture. Pour in enough milk to make about 3 quarts of filling.

    Makes 2 large pies and 1 small pie.

    Bake at 425° until starts cooking good, and turn back to 400° until knife comes out clean.
