Pumpkin Pudding

  • 1/2 stick oleo or butter
  • 1 c. sugar
  • 1/2 c. flour
  • pinch of soda
  • 2 c. pumpkin (one 1 lb. can)
  • 2 eggs
  • 1 tsp. vanilla
  • 1 c. evaporated milk

Directions

    Melt butter in baking dish.

    Mix the remaining ingredients with an electric mixer and pour into the dish.

    Then mix 1/2 teaspoon cinnamon and sugar.

    Sprinkle on top of pumpkin mixture.

    Bake at 375° for 25 to 30 minutes or until firm.

    (This tends to bubble over so put in a large enough dish that will allow for this.)
