  • 2 c. cooked pumpkin
  • 1 lb. very fresh tofu
  • 1 c. honey
  • 1/3 c. orange juice
  • 1 c. instant nonfat milk powder
  • 4 eggs
  • 1/4 tsp. salt
  • 1 Tbsp. cinnamon
  • 1/2 tsp. ginger
  • 1 Tbsp. grated orange rind
  • 1/4 tsp. cloves
  • 2 tsp. vanilla

Directions

    Mix ingredients in a blender until smooth.

    Pour the blended ingredients into a 9-inch square baking dish.

    Bake at 350° for 1 hour or until a knife inserted in the center comes out clean. Chill thoroughly.
