  • 2 c. sugar
  • 1/2 c. butter
  • 2 c. cooked pumpkin
  • 1/2 c. pecans
  • 1 c. flaked coconut
  • 2 tsp. cinnamon
  • 3 eggs
  • 1/2 c. self-rising flour
  • 1 (13 oz.) can evaporated milk or heavy cream

    Combine sugar and butter; mix well.

    Add eggs one at a time, beating after each addition.

    Stir in flour and milk, add pumpkin and cinnamon.

    Mix until smooth.

    Stir in 1 cup coconut and pecans.

    Pour into greased 2-quart casserole.

    Bake at 350° for 1 hour and 5 minutes.
