- 2 c. sugar
- 1/2 c. butter
- 2 c. cooked pumpkin
- 1/2 c. pecans
- 1 c. flaked coconut
- 2 tsp. cinnamon
- 3 eggs
- 1/2 c. self-rising flour
- 1 (13 oz.) can evaporated milk or heavy cream
Directions

1Combine sugar and butter; mix well.

2Add eggs one at a time, beating after each addition.

3Stir in flour and milk, add pumpkin and cinnamon.

4Mix until smooth.

5Stir in 1 cup coconut and pecans.

6Pour into greased 2-quart casserole.

7Bake at 350° for 1 hour and 5 minutes.

8To serve, add whipped cream and cherry or toasted coconut.
