Ingredients

  • 1/3 cup applesauce (you can make your own using a Beaba Babycook recipe)
  • 1/3 cup canned pumpkin (or fresh pumpkin puree)
  • 4 1/2 tbsp vegetable oil
  • 1 egg
  • 1 1/2 tbsp milk
  • 2 1/4 tsp molasses
  • 1/4 tsp vanilla extract
  • 5 1/2 tsp all purpose flour
  • 2/3 cup sugar
  • 1/2 tsp baking sodea
  • 1/2 tsp ground cinnamon
  • 1/2 ground nutmeg
  • 1/8 tsp baking powder
  • 1/3 cup chopped pecans
  • For Topping
  • 2 tsp packed brown sugar
  • 2 tsp chopped pecans (optional)
  • 1/8 tsp ground cinnamon

Directions

    n a large bowl, combine the first seven ingredients; mix well. Combine the flour, sugar, baking soda, cinnamon, nutmeg and baking powder; gradually add to pumpkin mixture and mix well. Stir in pecans. Pour into Multiportions.

    Combine topping ingredients; sprinkle over batter. Bake at 350° for 25-30 minutes or until a toothpick comes out clean. Cool for 15 minutes before removing from pans to wire racks. Yield: 10 portions
