- unbaked pastry shell (9-inch)
- 2/3 c. sugar
- 3/4 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. allspice (optional)
- 1 slightly beaten egg
- 1 3/4 c. canned pumpkin
- 1 c. milk
Directions

1Combine sugar, salt and spices.

2Add egg.

3Mix well.

4Stir in pumpkin; add milk.

5Stir until smooth.

6Pour into chilled pastry shell.

7Bake in hot oven (425°) for 45 minutes on shelf just below center of oven.

8To check for doneness, insert knife in center.

9If it comes out clean, it is done.
