  • unbaked pastry shell (9-inch)
  • 2/3 c. sugar
  • 3/4 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/2 tsp. allspice (optional)
  • 1 slightly beaten egg
  • 1 3/4 c. canned pumpkin
  • 1 c. milk

    Combine sugar, salt and spices.

    Add egg.

    Mix well.

    Stir in pumpkin; add milk.

    Stir until smooth.

    Pour into chilled pastry shell.

    Bake in hot oven (425°) for 45 minutes on shelf just below center of oven.
