  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 1 tsp. lemon juice
  • 3/4 c. flour
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. baking powder
  • 1 tsp. ginger
  • 1/2 tsp. salt
  • 1 c. chopped nuts

Directions

    Beat eggs for 5 minutes, then gradually add the sugar.

    Stir in the pumpkin and lemon juice.

    Mix dry ingredients together; add to pumpkin mixture.

    Spread in greased and floured 15 x 10-inch pan.

    Top with the chopped nuts.

    Bake at 375° for 15 minutes. Turn out on a towel which has been sprinkled with confectioners sugar.

    Starting at the narrow end, roll towel and cake together. Cool.

    Unroll.

    Fill with filling; re-roll cake.

    Chill before cutting into slices.
