- 3 eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 1 tsp. lemon juice
- 3/4 c. flour
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. baking powder
- 1 tsp. ginger
- 1/2 tsp. salt
- 1 c. chopped nuts
Directions

1Beat eggs for 5 minutes, then gradually add the sugar.

2Stir in the pumpkin and lemon juice.

3Mix dry ingredients together; add to pumpkin mixture.

4Spread in greased and floured 15 x 10-inch pan.

5Top with the chopped nuts.

6Bake at 375° for 15 minutes. Turn out on a towel which has been sprinkled with confectioners sugar.

7Starting at the narrow end, roll towel and cake together. Cool.

8Unroll.

9Fill with filling; re-roll cake.

10Chill before cutting into slices.
