- 3 eggs
- 2/3 c. pumpkin
- 1 c. sugar
- 1 t. baking soda
- 1/2 t. cinnamon
- 3/4 c. plain flour
- chopped pecans, optional
- 2 T. soft butter
- 8 oz. cream cheese softened
- 1 c. powdered sugar
- 3/4 t. vanilla
Directions

1Grease a 10x15 cookie sheet and line with waxed paper.

2Mix first six ingredients together in medium bowl.

3Pour mixture in cookie sheet and sprinkle with chopped pecans.

4Bake at 350 degrees for 15 min.

5Turn onto a towel sprinkled with powdered sugar and roll it up in the towel a few times while warm (for flexibility).

6Let cool, remove waxed paper and cover with filling.

7For filling, mix butter, cream cheese powdered sugar and vanilla.

8Beat until smooth.

9Spread over pumpkin mixture after cool.

10Roll up like a jelly roll and wrap in foil.

11Keep refrigerated.

12Will keep for weeks.

13Can be frozen.
