Ingredients

  • 3/4 C flour
  • 1 C sugar
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1 C Pumpkin puree
  • 3 eggs
  • 1 tsp lemon juice
  • 2 TBSP powdered sugar
  • 8 oz Cream Cheese
  • 1/4 C Butter
  • 1 tsp vanilla
  • 1 C Powdered Sugar

Directions

    Preheat oven to 190C. Grease and flour 9x13 pan/cookie sheet. Mix together the top four ingredients. Stir in the next three ingredients until mixed together. Pour dough into pan. Bake for 15-18 minutes. Lay down a damp towel on counter and sprinkle with 2 TBSP powdered sugar. Turn cake over onto towel. Carefully roll up the towel lengthwise. Cool for 20 minutes.

    For the icing beat the last four ingredients together. Once cake has cooled for 20 minutes unroll it carefully and spread the icing on the cake. Reroll the cake w/out the towel in plastic wrap or wax paper. Store in refrigerator until serving. Cut just before serving.
